GRAPES: Pignolo

WINEMAKING: traditional red wine vinification with skin contact for about 15 days; fermentation in steel with daily pump-overs and rack and return, followed by devatting into barriques, where the wine completes alcoholic, and then malolactic, fermentation before maturing unhurriedly in wood.

WINE: deep ruby red; forest fruits fragrances, attractively enhanced by sweet spiciness; full bodied palate with lots of personality.

FOOD MATCHING: outstanding with all red meats and mature cheeses; serve at temperature of 18-20°C.
